Assuming you would like 3 recipes: 1. Spicy Vegan Quinoa Burrito Bowls Ingredients:

1 cup cooked and cooled quinoa 1 large tomato, diced 1/2 cup cooked black beans

1/2 cup corn kernels 1/4 small red onion, diced 1 avocado, diced

2 tablespoons chopped fresh cilantro For the dressing: 3 tablespoons olive oil

2 tablespoons red wine vinegar or lime juice 1 tablespoon chili powder 1 teaspoon ground cumin

Instructions: In a large bowl, combine the cooked quinoa, diced tomatoes, black beans, corn kernels, red onion and avocado. Gently stir in the cilantro.

In a separate small bowl whisk together all of the ingredients for the dressing until smooth. Pour the dressing over the salad and serve immediately. Enjoy as is or serve inside warm tortillas!             2. Easy Vegan Ramen           Ingredients:   ramen noodles , vegetable broth , soy sauce , ginger , garlic cloves , brown sugar , sesame oil , mushrooms , bok choy , green onions     Instructions: Cook ramen noodles according to package instructions then drain (but do not rinse). Meanwhile, in a large pot bring the vegetable broth to a boil then reduce heat to medium-low and let simmer. Add in soy sauce, ginger, garlic cloves, brown sugar and sesame oil – stirring until combined. Let mixture continue to simmer while you prep your other ingredients. Thinly slice mushrooms then add them into the pot along with baby bok choy that has been chopped into bite-sized pieces. Allow soup to cook until vegetables are tender (about 5-7 minutes) then remove from heat and stir in green onions just before serving. Serve hot with additional green onions on top if desired!

            3 . Vegan Enchiladas Verdes            Ingredients : tomatillos , jalapeño pepper , vegan cream cheese spread (I used Tofutti brand), freshly squeezed lime juice , garlic cloves minced fine sea salt shredded vegan mozzarella cheese (I used Daiya brand) whole wheat or gluten-free tortillasFresh cilantro leaves for garnishSliced avocado for garnishSalsa verde for servingHot sauce for serving (optional)Instructions : Preheat oven 350 degrees F (175 degrees C).

Assuming you would like 3 recipes: 1. Vegan Quinoa Burrito Bowls Ingredients: 1 cup cooked and cooled quinoa, 1 large tomato diced, 1/2 cup cooked black beans, 1/2 an avocado, 2 tablespoons chopped fresh cilantro, 1/4 teaspoon ground cumin, salt and pepper to taste, 1 lime wedge.

Instructions: In a bowl, combine cooked quinoa, diced tomatoes, black beans, avocado and cilantro. Squeeze lime wedge over the top and season with cumin, salt and pepper to taste. Enjoy as is or serve inside a warm tortilla wrap.

2. Vegan Sweet Potato Black Bean Enchiladas Ingredients: 8-10 small soft wheat tortillas (6 inch), 2 cups cooked sweet potato mashed (about 2 large sweet potatoes), 15 oz can black beans drained and rinsed well., 10oz can red enchilada sauce,, 3 tbsp finely chopped fresh cilantro plus more for serving,, 2 tsp chili powder,, sea salt to taste,, optional toppings: vegan sour cream or plain yogurt,, salsa,, guacamole.

Instructions: Preheat oven to 375 degrees F (190 C) and lightly grease a 9×13 inch baking dish. Set aside about 10 minutes before beginning the recipe so the sweet potatoes have time to cool slightly after cooking. In a large bowl mash together the sweet potatoes until only small chunks remain then stir in black beans through chili powder until everything is evenly mixed.

Season mixture to taste with additional chili powder or sea salt if desired then set aside.. To assemble enchiladas spread each tortilla with a heaping spoonful of filling then roll up tightly and place seam side down in the baking dish.

. Once all enchiladas are rolled snuggle them close together in the dish then pour sauce over top making sure each one is well coated..

Bake covered for 25 minutes then remove foil and bake an additional 5-7 minutes until tops are slightly crispy.. Serve immediately topped with freshly chopped cilantro vegan sour cream salsa and guacamole if desired.. Enjoy!
