To make this Tinga de Pollo, you’ll need: -2lbs of boneless, skinless chicken breasts (you can also use thighs) -1 large onion, diced

-3 cloves of garlic, minced -2 chipotle peppers in adobo sauce, plus 1 tablespoon of the sauce -1 (14oz) can diced tomatoes

-1 (8oz) can tomato sauce -1 teaspoon smoked paprika -1 teaspoon chili powder

Add the chicken breasts to a large pot or Dutch oven and cover with water. Bring the water to a boil over medium heat and then reduce the heat to low and let the chicken cook until cooked through (about 10 minutes).
