This past weekend, I decided to attempt a Subway Oatmeal Raisin Cookie recipe that I found on Reddit. The recipe is as follows:


-1 1/2 cups all-purpose flour

-1 teaspoon baking powder

-1/2 teaspoon baking soda

-1/2 teaspoon salt

-1 cup (2 sticks) unsalted butter, at room temperature

-3/4 cup granulated sugar

-3 large eggs, at room temperature

-1 teaspoon pure vanilla extract

-2 cups rolled oats


Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

In a bowl, whisk together flour, baking powder, baking soda and salt.

In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar together until light and fluffy, about 3 minutes. With mixer on low speed, add eggs one at a time, mixing until each is incorporated before adding the next; mix in vanilla. Add flour mixture and oats; mix just until combined (dough will be stiff).

Drop dough by tablespoons onto prepared baking sheet; flatten slightly with your fingertips if desired (cookies will spread during baking). Bake cookies until golden brown and set around edges but still soft in centers for 12 minutes or so.
