Beef tortellini soup is one of my favorite wintertime meals. It’s hearty, filling, and so comforting on a cold day. This particular recipe features braised beef, fresh tortellini, and plenty of vegetables simmered in a delicious tomato sauce.

It’s truly the perfect wintertime meal! To make this soup, you’ll first need to brown some beef in a large pot or Dutch oven. I like to use chuck roast for this soup because it’s nice and tender when braised.

Once the beef is browned, add in some chopped onion, garlic, carrots, and celery. Then pour in a can of crushed tomatoes (I like to use San Marzano tomatoes) along with some chicken broth. Season the soup with salt, pepper, oregano, and thyme then let it simmer away until the beef is nice and tender – about 45 minutes to an hour.

While the soup is simmering away, cook up some fresh tortellini according to package directions. I like to use cheese tortellini for this soup but feel free to use your favorite variety. Once the tortellini are cooked, add them into the pot along with some frozen peas.
