  • 1 tbsp. olive oil salt and
  • pepper to taste 3 cloves of garlic, minced
  • 1 onion, diced

    can of diced green chilies, undrained 14 oz. can of fire roasted diced tomatoes, undrained Instructions: In a large resealable bag, combine the chicken thighs, cumin smoked paprika, chili powder, garlic powder and olive oil.

Season with salt and pepper then seal the bag and massage it until all of the ingredients are mixed together and the chicken is coated evenly. Let it marinate in the fridge for at least 30 minutes (up to 12 hours).

Preheat a large skillet over medium-high heat then add in the chicken (discard any excess marinade) and cook for about 6 minutes per side until browned and cooked through. Remove the cooked chicken from the skillet onto a plate then set aside. To the now empty skillet, add in the garlic cloves onions bell peppers green chilies tomatoes .

Cook stirring occasionally until everything is soft – this should take about 10 minutes total. Once done cooking stir in any juices from the cooked chicken then serve immediately with rice or tortillas on the side!

Melting Pot Mojo Review

When it comes to food, there are few things more comforting than a big pot of stew bubbling away on the stove. And when that stew is packed full of flavorful spices, fresh vegetables, and hearty chunks of meat, it’s even better. That’s exactly what you’ll find at Melting Pot Mojo, a new restaurant in town that specializes in international stews.

We stopped by for lunch on a weekday and were impressed by the variety of stews on offer. There was an Indian-style chicken stew with plenty of heat; a thick beef and vegetable stew that tasted like it had been simmering all day; and a lighter fish stew with delicate flavors.

All of the stews came with either rice or bread on the side, and we opted for the latter so we could soak up every last drop of deliciousness. The portions were generous and the flavors spot-on, making Melting Pot Mojo a great option for a hearty (and affordable) meal.
