  • Ingredients:
  • 6 whole tomatoes
  • 4 cloves garlic
  • 1/2 teaspoon cumin seeds
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh cilantro leaves
  • 3 tablespoons olive oil, divided
  • 2 tablespoons white vinegar


1) Preheat oven to 375 degrees F (190 degrees C).

2) Arrange the tomatoes on a baking sheet. Roast in the preheated oven for about 45 minutes, or until soft and lightly browned.

3) Peel and chop the roasted tomatoes.

4) In a blender or food processor, combine the roasted tomatoes, garlic, cumin seeds, chili powder, salt, cilantro leaves, 2 tablespoons of the olive oil, and vinegar. Puree until smooth. 5

) Pour into a serving dish and drizzle with remaining olive oil. Serve at room temperature or chilled.

King Taco Sopes Recipe


2 lbs. ground beef

1 onion, diced

1 green pepper, diced

2 cans refried beans

1 (15 oz) can tomato sauce

1 (4 oz can diced green chilies),

undrained 1 tablespoon chili powder

1 teaspoon garlic powder

Salt and pepper to taste

10-12 king taco shells** see note below

In a large skillet over medium-high heat, add the ground beef and onions. Sauté until the beef is browned and onions are softened. Add in the green peppers, refried beans, tomato sauce, green chilies, chili powder, garlic powder and salt and pepper to taste. Stir until everything is evenly combined and heated through.

Serve inside king taco shells** with desired toppings such as lettuce shreds ,cheese ,diced tomatoes ,and sour cream . Enjoy!
