Cajun Rattlesnake Pasta Recipe
-1/2 pound dried pasta
-1 tablespoon olive oil
-1/2 cup diced onion
-3 cloves garlic,
-1/4 teaspoon cayenne pepper
-1/4 teaspoon black pepper
-1 (14.5 ounce) can diced tomatoes, undrained
-1 (8 ounce) can tomato sauce
-1/2 cup water
-1 teaspoon Italian seasoning
-1/4 teaspoon salt
-3 drops hot pepper sauce
-2 tablespoons chopped green onions
1. Cook pasta according to package directions.
2. While pasta is cooking, heat olive oil in a large saucepan over medium heat.
Add onion, garlic, cayenne pepper, and black pepper;
cook for 3 minutes or until onion is tender.
Stir in tomatoes and remaining ingredients; simmer for 10 minutes or until slightly thickened. Drain pasta; add to tomato mixture, tossing well to coat.

-1 pound of ground rattlesnake meat
-1/2 cup of all-purpose flour
-2 tablespoons of olive oil
-1/2 teaspoon of salt
-1/4 teaspoon of black pepper
-1/2 cup of dry white wine
-3 cloves of garlic, minced
-1 tablespoon of chopped fresh parsley leaves
-1/4 teaspoon of dried oregano leaves
-1/4 teaspoon of dried thyme leaves
-1 (28 ounce) can of crushed tomatoes in thick purée,
-1/4 cup of julienned sun dried tomatoes (not packed in oil) reconstituted in boiling water for 5 minutes then drained
-8 ounces of uncooked fettuccine noodles
-Grated Parmesan cheese (optional)
In a large skillet over medium heat, cook the ground rattlesnake meat until it is browned. Drain off any excess fat and remove from heat. In a small bowl, whisk together the flour, salt and pepper.
Add this mixture to the pan and stir to combine. Return the pan to medium heat and add the olive oil. Once hot, add the garlic and cook until fragrant. Add the wine and simmer for 2 minutes. Stir in the parsley, oregano, thyme and crushed tomatoes.
Simmer for 10 minutes or until slightly thickened. Add the sun dried tomatoes and cook for an additional 5 minutes. Meanwhile, cook the fettuccine noodles according to package instructions. Drain well.
